Over the past five years, he has dedicated himself to mastering the art of artisanal bakery, particularly focusing on gluten utilization and traditional sourdough techniques. Nagi's mission is to champion simpler, healthier bread options amidst rising gluten intolerance, utilizing locally sourced ingredients to create unique flavor profiles. With a background in both baking and cooking, he aims to tantalize taste buds with vibrant flavors and artistic flair, while continuing to refine his skills in patisserie.

With over 45 years in hospitality, David Crocker holds qualifications as both baker-confectioner and chef. Beginning his journey at 15 with a four-year apprenticeship, he mastered baking, then successfully run a restaurant for 12 years. Transitioning to management, he led operations for a notable bakery before pursuing further qualifications in Professional Cookery. As a seasoned lecturer, he developed and delivered bakery courses, earning teaching credentials and a degree, now contributing as an external verifier for the SQA.

With a dedication to sourcing locally whenever possible, we blend heritage with innovation to create unique and flavorful offerings.
